In the window that opens up, find the Open with option and from the dropdown select which app you want to open these types of files with. Select any MP3 file on your system, right-click the file and select Get Info. For example, you have music files in several different formats and you want one of them, lets say MP3, to always open with QuickTime Player instead of iTunes.
